Healthy Quinoa and Vegetable Chicken Bowl

  • 1 cup Quinoa
  • 2 cups Chicken Broth optional
  • 1 lb. Chicken cut
  • Broccoli florets I buy prepackaged and pre-cut in the produce department to save time
  • 2 Yellow Squash
  • 1 package Carrots, pre-sliced
  • 1 package Grape Tomatoes
  • 1 Tbs Monterey Seasoning
  • 2-3 Tbs Extra Virgin Olive Oil
  1. Make quinoa according to package directions. I like to make mine with chicken broth instead of water for extra flavor.
  2. Mix chicken and vegetables with olive oil and monterey seasoning.
  3. Cover a cookie sheet with foil and cooking spray, then spread chicken and vegetables on the cookie sheet.
  4. Cook for about 30-40 minutes at 400 degrees until chicken has reached 165 degrees.
  5. Serve chicken and vegetables over quinoa.
